AMG Pineapple Highball

Decoration: Pineapple wedge
Additional Ingredients:
Pineapple-Sage Soda:
• Water: 800 ml
• Pineapple: 700 g (peeled, cored, and cut into medium pieces)
• Granulated sugar: 250 g
• Malic acid: 5 g
• Citric acid: 8 g
Instructions:
Place the ingredients in a SOUS VIDE bag. Seal the bag and cook in a SOUS VIDE for 2 hours at 60°C. Strain the liquid through a sieve and cheesecloth. Pour the liquid into a siphon, add two sprigs of sage, and carbonate with a CO2 cylinder. Chill well.

Recipe:
- Pour AMG Pineapple into a highball glass filled with ice. Top with Pineapple-Sage Soda. Garnish with a pineapple wedge.
