The process of making London Dry gin features four distinctive steps:
• Careful selection of botanicals: only hand-selected ingredients are used in production;
• Preliminary maceration: juniper and coriander are macerated in neutral wheat spirit;
• Aromatic spirit production: juniper spirit is obtained in a pot still, followed by a repeated redistillation with additional botanicals (such as citrus peels, spices and herbs);
• Mandatory rest: the finished gin undergoes a long rest before bottling, followed by additional rest in the bottles.
