GIN PRODUCTION

Two modern pot stills enable us to produce both classic distilled gin and London Dry gin.

Our gin is crafted exclusively from natural botanicals sourced from around the world, with juniper from Macedonia being the most essential ingredient.

Distilled gin is made from aromatic spirits of juniper, spices, and citrus peels. We obtain the aromatic spirit by infusing juniper with wheat spirit, followed by distillation in a pot still.

The process of making London Dry gin features four distinctive steps:
• Careful selection of botanicals: only hand-selected ingredients are used in production;
• Preliminary maceration: juniper and coriander are macerated in neutral wheat spirit;
• Aromatic spirit production: juniper spirit is obtained in a pot still, followed by a repeated redistillation with additional botanicals (such as citrus peels, spices and herbs);
• Mandatory rest: the finished gin undergoes a long rest before bottling, followed by additional rest in the bottles.
